I am looking at your recipe for Mini Polenta Pies as it appears in Forks over Knives. You say 1 cup Polenta. I assume but wonder if I am correct that the polenta you mean is corn meal. There is polenta on the market shelf that is pre made. Could you clarify?

Thank you for bringing up a good point that I should have clarified in my recipe. Yes I do mean cornmeal when I say polenta, however, cornmeal traditionally takes twice as much time to cook, so I use the quick cook or instant polenta that had been pre-cooked to a certain extent. You will find it in the form of dry granules in the pasta section or in the bulk section of health food stores. The pre-made polenta that is sold in a block or a tube is fully cooked and will not be appropriate for this recipe.I hope you enjoy the dish.
